I hated them as a child but hoped my palette had matured. I cut off the tops (for salad), scrubbed the roots, brushed them with butter and EVOO, salt & pepper, wrapped them in foil and lovingly roasted them until tender on the grill along with chicken. When done, I portioned the chicken and served it with warm, sliced beets w/vinaigrette. *chew* *tortured swallow* Ug. They still tasted like beets. Oh well, I'll try again in a decade or two... I put them in the most shaded of my beds and they have failed to prosper. Even the rabbits seems to have turned their noses up at them! I like the idea of serving beets with nectarines and goat cheese. That sounds delicious!<br />P.S. I am putting in a call to God on your behalf.
